Day 10, Gluten-Free Eggnog Cookies

These are a new addition to our annual feast. I found this recipe in a christmas cookie cookbook I had received before my gluten-free life. I did a bit of tweaking and voila! Deliciously soft and chewy eggnog cookies. They were scarfed down that same night with just 2 cookies remaining the following morning.

These cookies are not terribly sweet which make them a great addition if your sweet tooth is overwhelmed with all the other sweet treats. And like the other cookies, these are indistinguishable from “real” gluten-containing cookies.

Gluten-Free Eggnog Cookies
soft, chewy, heartwarming cookies!

2 3/4 cups gluten-free flour
1 tsp baking powder
3/4 tsp nutmeg
1 tsp cinnamon
3/4 cup butter, softened
1 1/4 cups sugar
1 tsp vanilla
2 large eggs
1/2 cup eggnog
nutmeg for sprinkling

Cream butter and sugar until smooth and creamy. Add eggs and eggnog and beat until smooth. Add remaining ingredients and mix until combined.

Drop by teaspoon onto greased or lined cookie sheet and sprinkle with nutmeg as desired. Bake at 300F 15-20 minutes or until bottoms turn light brown.

Leave on cookie sheet until fully cooled and then remove to serving plate or eat with a fresh glass of milk or even better, eggnog. Enjoy!
