Gluten-Free Pies, Bread, Cranberries…

gluten-free pies

I have 5 younger sisters. I am the oldest and thus #1. #2 is married. #3 is married. Next Saturday, #5 is getting married to her super sweetie. Tomorrow she and sister #4 are coming up from Vancouver, WA for hair appts, dress fittings, and etc. As this is the last weekend that #5 will be a singleton Mom decided that a big family meal was in order. And what is better for a big family shindig than a turkey meal complete with stuffing, taters, sweet potatoes, cranberries, pies, a pumpkin roll and the other traditional turkey trimmings.

We are eating at my house so I’m in charge of making things that need to be gluten-free. This included bread for the stuffing, pies, and a pumpkin roll (similar to a swiss cake roll. pumpkin sponge cake filled with cream cheese frosting and rolled into a log. fabulous!!). I also did cranberries as I had several large bags in my freezer.

My home now smells like Thanksgiving Day. There are two pumpkin pies and an apple pie cooling on the counter. The loaf of bread is sitting on a bread rack, cooling down so I can cut it into crouton size chunks and dry in the oven to make the stuffing with tomorrow. The cranberries have been boiled and are sitting in a bowl until they are cool enough to stick in the frig. And the pumpkin roll is rolled in a towel awaiting the cream cheese filling.

I will sleep well tonight. Satisfied with the baking I’ve done this evening. Eager to welcome the 12 members of our family that are able to be here. And so very excited for my little sister and her journey from a young girl to a wife.
