Gluten-Free Pastrami Sauerkraut Melt

Not what you’re thinking! There is no bread involved with this utterly fantastic dish. Just the great flavor of a juicy Reuben sandwich, sans bread.

This can be served with chips or over french fries. Either way is equally delicious, although I do prefer the french fry version. Mmm.. so yummy! Unfortunately we ate this all before I could snap a photo so this post will have to wait until I remake this for a photo to be added.

I’m not a huge sandwich eater – even with the best in GF bread, breads leave me feeling a bit blah. So I like to make things w/out bread when possible. I had a hankering for a reuben the other night but I’ve yet to find a substitute for rye bread that I like so I figured that my craving would go unsatisfied. Then my sister opened a recipe box she had received for Christmas and there was a recipe for a reuben dip. Hello craving, there is hope!

I tweaked the recipe (of course) to make it more to my liking and the end result was so good, I actually got sick from eating *way* more than I should have. It was totally worth it though.

I think that this melt would be fabulous at a party or an event like a game night or family get-together. The delicious flavor of the meat, combined with the tang of the sauerkraut are completed by the creamy cheese and thousand island dressing. Mmmm..

Gluten-Free Pastrami Sauerkraut Melt
takes 1 hour from start to finish

1 pound finely chopped or shredded pastrami OR corned beef, your choice!
16 ounces sauerkraut
8 ounces cream cheese, softened
8 ounces shredded swiss cheese
3/4 cup thousand island dressing

Put all ingredient into crock pot and stir to combine as much as you can. Cook on medium heat, stirring every 10-15 minutes, until cheese is melted and the contents are thoroughly mixed.

Serve with chips or over french fries. Yum yum good!
